Palanthas Potatoes (Twice-Baked Potatoes)
This dish did not originate in Palanthas, but was so named for the city (or rather its inhabitants) by a Knight of Solamnia. He likened the potato innards to the people of Palanthas, who came out of their walls to be mashed up, then returned to be eaten. Palanthians don’t care for the analogy, but they enjoy the dish anyway, using its more common name – TwiceBaked Potatoes.
For each freshly baked potato:
- 1 tablespoon sour cream
- ½ teaspoon chives
- 2 tablespoons sharp cheddar cheese, grated
- ½ tablespoon butter, melted
- Salt
- pepper
Half freshly baked potato lengthwise. Let cool at least 10 minutes. Carefully scoop out insides, leaving ⅛ inch to ¼ inch of potato near skin so shell remains intact. Mash or rice potato innards and mix with sour cream, chives, butter and half the cheese. Add dashes of salt and pepper to taste.
Stuff mixture back into shells. Cover each potato with the remainder of grated cheese. Bake at 350 degrees for 10-15 minutes, until cheese is melted and potato is hot throughout.
Potatoes can be prepared in advance and refrigerated of frozen. Cooking time will be longer for cold potatoes. Frozen potatoes must be thawed before heating. These potatoes also microwave easily in 2 to 5 minutes, depending on size and temperature of potato. They reheat well after the second baking, wrapped in foil in a regular oven or in waxed paper when microwaving.

I begin by collecting the ingredients, and with four people in my household, I have to multiply this recipe accordingly. Four medium to large potatoes, four tablespoons sour cream, two teaspoons chives, fresh from my garden, eight tablespoons sharp cheddar cheese, grated, two tablespoons butter, melted, and salt and pepper to taste. Because this deals with baked potatoes, we have to start there. I rinse off each potato, making sure there is no dirt present. Then grease the broiler pan with olive oil, and spray each of the potatoes with olive oil before seasoning the skin and adding holes for steam to escape. This makes for a more crispier skin. Then I put the temperature to 450 degrees and after preheating, bake the four potatoes for 23 minutes, flip them over and cook for an additional 23 minutes.
Now that the potatoes have cooled for 10 minutes, we can continue with the recipe. Start by halving the potatoes lengthwise, and scooping out the insides, trying to leave one eighth or one fourth of the insides inside the shell to maintain its integrity. Once all of the insides are in a bowl, add your ingredients. The four tablespoons of sour cream, chop up the chives from my yard, and add them to the mixture. I grate the cheese, and I am estimating the amount because too much cheese is just enough. I add half of it to the mixture. Then I add the two tablespoons of butter. We keep out butter at room temperature, so it isn’t fully melted, but it will mix perfectly in its softened state. Finally I add the aggressive salt and pepper mixture, and mash it all together with a potato masher.
Once it is the consistency desired, scoop it back into the empty shells, and top with the remaining cheddar cheese. You will be putting them back in the oven at 350 degrees for ten to fifteen minutes. You are really just waiting for the cheese to fully melt at this point. When it is melted, you can see we have bacon cooking for an added topping because we are civilized in this household, you are free to serve up the two halves to each of your salivating family members and enjoy. This was a very tasty way of preparing a baked potato that I haven’t done before, but I guarantee it is not going to be the last time I make it.
