Otik’s Spiced Fried Potatoes
- 1 pound potatoes (any kind)
- 3 tablespoons butter
- ½ medium onion, finely chopped
- 1 to 2 dashes cayenne
Scrub potatoes, and remove any eyes. Chop into ½-inch cubes with skins. Melt butter in frying pan (traditionally an iron skillet), and heat until sizzling. Add cayenne to butter; stir. Place potatoes in butter and fry until crisp; stir occasionally. Add onion and fry 1 more minute. Serve hot, salted to taste. Serves 2 to 4.

I always imagined this recipe being more like spicy steak fries that chopped up fried potato bits. This is something my wife makes for Sunday breakfast regularly, only without the Cayenne. I started by gathering the ingredients: One pound of potatoes, three tablespoons of butter, one-half medium onion, chopped finely, one to two dashes cayenne. I added a bit more.
Next I washed and cleaned the potatoes, checking for glaring eyes, though I didn’t find any. Then I cut the potatoes up into one-half inch-ish(?) squares(?). I have no idea how to cut an oblong shape into squares that isn’t too long for a short video without losing the skins, and I wasn’t going to do that! Then I cut up half of the medium onion, chopping it finely.
Now the ingredients are ready for the cast iron skillet. I heated it on medium heat then added the butter till it was melted and hot, and added the cayenne. After mixing them together, I added the potatoes. I will check back with these, mixing them often to coat all sides with the butter mixture and add color and crispiness to them. Then I turned the temperature down a bit and added the onions. I let it cook for a few minutes longer to help dissolve the onions and plated it up!
Ultimately this is a boring as hell recipe that needs desperate attention. You could add salsa as a topper for some balancing spice and lift, or if you are basic yourself, catsup… We ended up pairing it with pan fried honey orange chicken, and it was decent. I have no idea what Caramon’s palate is like, but if this is what he went crazy for, I have to introduce him to my wife’s cooking. Or maybe not… He might never leave.
